2021 Brut Rosé
Hunter Valley – Chardonnay 59.1% | Pinot Noir 39.9% – Traditional Bottle Fermentation
Tiraged in November 2021 and aged for 3½ years on lees, this Brut Rosé displays a delicate salmon-pink hue, gained from the addition of a red wine liqueur. In the glass it is lively and bright, with a fine, persistent bead.
The aroma combines fresh berry fruits – strawberry and raspberry – with subtle toasty yeast characters from extended lees ageing.
On the palate, a crisp, dry Rosé style unfolds. The first sip offers a harmonious blend of berry sweetness and a subdued citrus tang, giving way to nutty, bready notes through the mid-palate. The sugar dosage balances the acidity, adding weight and texture while complementing the wine’s complexity. The finish is clean, refreshing, and lingering, with a bright acid line that invites another sip.
Food Pairing: An elegant aperitif, perfect with canapés and seafood such as oysters, smoked salmon, or freshly peeled prawns.
