Bright straw in colour with a fresh effervescence and tight mousse.
Fresh citrus notes dominate the aroma, but a hint of the bready yeast notes adds interest.
Bold and crisp citrus notes persist from the aroma to the front palate. Initial impressions are fresh and zesty but as it moves to the mid palate the complexity and palate weight of the yeast characters starts to show. The fresh baked bread and nutty notes from ageing on yeast lees are subtle.
The wine finishes with great length and there are hints of peaches with the crisp citrus acid notes. The acidity readies the taste buds for another sip.
Light to medium intensity seafood and white meat dishes.
Sparkling wines are made to be served cold – less than 4 C. Store for 24 hours in a domestic fridge prior to opening or leave in wet ice for 2-3 hours.
