Appearance
Dark plum red in colour, the wine pours with a lively mousse.

Aroma
The aroma is a blend of peppery notes and some spicy stewed fruit.

Palate
Up front there is an abundance of dark berry fruits, blackberries & boysenberries which are elevated with the sugar dosage. 

The mid-palate is a blend of the more savoury and spicy notes. Mint, pepper and Christmas pudding combine to give depth of flavour and palate weight.

The tannins and oak come through as the wine finishes to give a balanced profile. The initial sweetness subsides, and the peppery spicy notes re-emerge leaving you ready for the next sip.

Pairing
This wine would complement game meats and a hearty roast. Would also pair well with an after dinner cheese platter.

Serving Suggestion
Sparkling reds are made to be served cold – less than 4 C. Store for 24 hours in a domestic fridge prior to opening or leave in wet ice for 2-3 hours.
